this sugar alcohol (polyol) is a food additive (E420ii), used primarily as sugar replacement, humectant and stabilizer. It contains about 1/3 fewer calories than sugar and it is 60 % as sweet as sugar. It is widely used in the food and beverage industry to reduce their calorie content. It is very popular for candies and chewing-gums because it does not contribute to the formation of cavities, and because of its cooling effect in the mouth. For its ability to withstand high temperature, it is suitable for bakery/confectionery products: in fact, sorbitol does not participate in the Maillard reaction, so it will not brown or caramelized the products.
